Ingredients for the mayonnaise:
- 1 egg yolk
- 1 tsp mustard
- Japanese chili pepper
- Salt
- Sunflower oil
- 1 tbsp lemon juice or vinegar
Ingredients for the onigiri:
- Mayo
- 2 slices of smoked salmon or trout
- Furikake
- 1 half lemon
Making the mayo:
- In a bowl, mix 1 egg yolk, 1 tsp mustard, a pinch of Japanese chili pepper, a pinch of salt, and start whisking.
- Gradually add sunflower oil while whisking until the mayo thickens.
- Incorporate 1 tbsp lemon juice or vinegar and mix well. Set aside.
Preparing the onigiri:
- Add to the chopped smoked trout, 1 tsp mayo, some furikake, and lemon.
- Insert this delicious mix into your onigiri.
- To make a cute round hat for the onigiri, squeeze the diced salmon in your hands.
