Smoked salmon, homemade mayonnaise & furikake

For 6 onigiri

Ingredients for the mayonnaise:

  • 1 egg yolk
  • 1 tsp mustard
  • Japanese chili pepper
  • Salt
  • Sunflower oil
  • 1 tbsp lemon juice or vinegar

Ingredients for the onigiri:

  • Mayo
  • 2 slices of smoked salmon or trout
  • Furikake
  • 1 half lemon

Making the mayo:

  • In a bowl, mix 1 egg yolk, 1 tsp mustard, a pinch of Japanese chili pepper, a pinch of salt, and start whisking.
  • Gradually add sunflower oil while whisking until the mayo thickens.
  • Incorporate 1 tbsp lemon juice or vinegar and mix well. Set aside.

Preparing the onigiri:

  • Add to the chopped smoked trout, 1 tsp mayo, some furikake, and lemon.
