Cooking steamed rice

Cooking precious rice is like a poesie, it has to be thoughtful & delicate.

Washing

Rinse your rice thoroughly with water, repeating the process 3 times until the water runs clear.

Combine the rice (Kichō's rice bag = 300g) with 400ml of water and let it soak for 30 minutes. (Directly into the chosen pot)

This step allows the rice grains to hydrate and ensures uniform cooking.

Cooking

In a pot, 

Place the lid on the pot with a kitchen cloth underneath.

Cook on high heat for 8 to 9 minutes. Listen carefully, you need to hear it boil.

Reduce the heat to low and simmer for an additional 9 to 10 minutes, then turn off the heat.

If you have a rice cooker : you just have press the start button and let it do the rest.

When cooking is complete

Let the rice rest covered for 15 mins without opening the lid.

Then open the lid and discover the gorgeous, fluffy rice you've so carefully sublimated.

Mix the rice gently with a spatula and let it cool slightly.

Keys to success 🍚

  • Be patient and maintain the lid on throughout the entire cooking process.
  • Wash the rice well.
  • Choose a small pot.
  • Do not add rice vinegar or salt.
  • Listen to the rice.

Shape your onigiri

Now comes the fun part !

Shaping

Set aside a medium bowl of room temperature water.

Add a large spoon of rice to the mold, then gently spread it out towards the sides. 

Place the garnish of your choice. 

Then cover with a spoon of rice.

Place the lid on top and press lightly, then remove and unmould your beautiful onigiri.

Add the nori seaweed and furikake (seasoning) as you wish.

Keys to success 🍙

  • Use warm rice.
  • Always deep your tool into the water before using it with the rice.
  • Close your eyes for the first bite.
