The chicken spheres have been my most delightful find this year. They strike a perfect balance between caramelization and just the right amount of saltiness, with a tender interior and an wonderful flavor thanks to the hint of ginger.

They're absolutely perfect in an onigiri, just a heads up, they can be quite addictive!

Recipe : Chicken spheres & edamame

Ingredients:

  • For the chicken spheres: 2 minced chicken fillets, 1/2 red onion, a piece of ginger, 1 garlic clove, 1 tblsp soy sauce, 1 tblsp sesame seeds, 3 tblsp panko breadcrumbs, 2 tblsp potato starch.
  • For cooking: olive oil, brown sugar, soy sauce, water, sesame oil.
  • Furikake and edamame

Prepare the Chicken Spheres:

  • Mix minced chicken, finely chopped red onion, ginger, crushed garlic, soy sauce, sesame seeds, panko breadcrumbs, and potato starch. Form small spheres and roll them in the starch.

Cooking:

  • Heat olive oil in a pan and cook the chicken spheres until golden brown.
  • Remove excess oil, add a mix of brown sugar, soy sauce, water, and a splash of sesame oil to the pan.
  • Allow the mixture to reduce. Once reduced, sprinkle sesame seeds over the chicken spheres. Let it caramelize and then remove it from the heat.

Finishing Touch:

  • Create onigiri using the chicken spheres, edamame, and furikake.
