Beef tataki & green beans

For 10 onigiri

Ingredients:

  • Beef steak (tender cut)
  • For the sauce: 5 tbsp soy sauce, 3 tbsp sesame oil, 3 tbsp brown rice vinegar, a pinch of Japanese chili pepper, 1 garlic clove, 1 cm grated ginger, 1 half lime.
  • Cooked green beans for the feeling

Searing and Marinating the Beef:

  • Season the beef with black pepper.
  • Sear the beef over high heat in a pan until the exterior is caramelized, leaving the interior rare.

Preparing the Sauce:

  • Mix 5 tbsp soy sauce, 3 tbsp sesame oil, 3 tbsp brown rice vinegar, a pinch of Japanese chili pepper, minced garlic, grated ginger, and the beef's cooking juice.
  • Marinate the beef in this flavorful sauce for 6 hours.

Finishing touch:

  • Allow the beef to come to room temperature before serving.
  • Use your sharpest knife to cut thin slices.
  • Gently place the beautiful tataki slices on onigiri, ensuring to sprinkle them with the marinade.
