For: 10 onigiris
Ingredients:
- 1 shallot
- 200g minced beef
- 1 tbsp ketchup
- 1.5 tbsp soy sauce
- a few drops of Worcestershire sauce
- 1 tbsp olive oil
- Chives
- Cheddar cheese
- For cooking and glazing the onigiri: olive oil and soy sauce
Preparation:
- Finely chop the shallot and sweat it in a pan with olive oil, then add the beef and grill it over high heat.
- Add the ketchup, soy sauce, and Worcestershire sauce.
- Let it caramelize while stirring, then remove from heat.
- Add this mixture to the rice, along with chopped chives, and mix gently.
Assembling the Onigiri:
- In a mold previously soaked in water, add a spoonful of the mixed rice, ensuring to create a well.
- Add the cheddar cheese mixture into the center of the onigiri.
- Then, add another spoonful of rice, close the mold, exerting light pressure, and unmold.
Cooking and Glazing:
- In a hot pan with olive oil, grill the onigiri over medium heat.
- Once golden, apply soy sauce using a brush, and flip again to color both sides of the onigiri.
- To avoid breaking the onigiri when handling it, use a spatula and lift it gently.
Enjoy immediately while hot to enjoy the melted cheese!
